I’ll be the first to admit that I can’t follow a recipe to save my life. I hate it! Maybe it’s because I believe in being creative in the kitchen more so than being able to perfectly replicate someone else’s creation. Or maybe it’s because I simply have different tastes.
In any case, because I don’t often use them, I also don’t often share my own. However, due to many requests to do so, I though I might try it out! They will all be dishes I make at home for friends and family. Some of them I plan to serve once we get our truck or restaurant going. Most are dishes I created myself based loosely on dishes I have had or recipes I’ve come across along the way. For whatever reason, that gene that let’s people segment food genres effectively is lacking from my brain, so I tend to see all food as food, and these recipes cross cultures like the world has no borders.
Allow me to be candid about portioning of spices and other ingredients: I rarely ever measure anything, so use them as a guide, not the law. If you love an ingredient, use a little more. If you don’t, use less. Maybe make it close to my way the first time since it is likely to be something so different than anything you’ve had before, and then make your own #RecipeRemix in the next attempt.
Also – the one common denominator you will find in MOST (but not every single) recipe is our spice mix. It really is a key ingredient, because it’s a flavor that is very hard to duplicate. You can get our spices here.
